Use a fan so they dry fast enough... If you put them in a paper bag they should be ok, if a sealed mason jar then watch out for humidity. The seed skin should be brittle at all times if the skins bend you are getting humid if gummy you are into real trouble.

It will take up to two weeks to air dry. I would dry them for one more week after the skins start to flake. Not an expert but I want to help point you in the right direction.

You can get them to dry quicker if you peel off the membrane, But that can be a time consuming process. You need a sharp thumbnail or a straight pin to get under the membrane. It gives you an excuse to sit in front of the TV and take in a game or movie while you remove the membranes. And a fan is a real big help to drying the seeds.

Put em on paper towels spread out- they'll stick to it as they dry.Run a fan over them. In cali it will take something like 7 to nine days for the outside to be dry. I then put them in a brown paper lunch bag-prob three more weeks before theyre getting real dry inside.Dont put them in plastic or glass containers unless your 100% sure theyre dry.You can put them in the plastic envelopes earlier if you punch a hole in it with a paper punch.

I just stuck some in my wife's food dehydrator as an experiment. (Don't tell her, she doesn't know about it)
It has a low setting of 95 degrees. I will do some test germs when its done to make sure they weren't cooked and report back my findings.

Or get more drying efficiency by putting a small heater behind the fan it can make a big difference. Even though it adds only a few degrees heat... if your air is humid it might cut the time in half.
