If I grow my carrot for two years, would (or theoretically, could) it be bigger the second year? Please explain. Thank you in advance for sharing.

I don't think so but it will go to seed because they are biannual.

I believe the world record longest carrot was 15 months old. You'll have a hard time keeping a carrot in growth much longer than that. The older a carrot gets, the less stress it takes to cause it to bolt.
Theoretically, you could keep it perpetually growing, but would be incredibly hard to manage fertility, temperature, and light all in ideal ranges for that long without some period of stress setting it off.
