What are some ways to get the vine to lay down without breaking it? Attached is my grower diary picture of the vine.

Build up some soil so you don't have to bring vine down so much and make sure you bring it down when temps are 85-90 a little at a time. You can move it a few times per day. If too cold it will snap like a crisp carrot.

i agree with each above - it seems that the largest leaf's stalk will support the weight of the growing vine and there is nothing that can be done beyond where the stake is that you have already trying to push the vine down; i would drive another (2) stakes in, straight up and down, 1 on each side of the developing main vine to keep it exactly in the direction you want it to grow and perhaps even pile-up something (cloths/shop towels) under the vine to daily measure/monitor its hopefully-downward tendency, maybe removing these gradually if there IS progress - nothing will be slower and more careful than its own growth; ---eg
