How do I clean and store pumpkin seeds properly

Put them in a pasta strainer, run hot water over them and remove solid debris. Add some antibacterial soap and continue washing them with hot water. Rinse well and put them on a screen from an old window to dry. Make sure there is air circulating above and below the seeds. Store them in bulk in a ziplock bag in a dry place.
You can get more elaborate than that but these are the essentials.

Is better to store in at room temp or in a fridge?

Fridge is good but best in a moisture sealed container such as a mason jar.

Is it correct to wait and remove the seed coat before storing to ensure that they are dry?

Before you put them in a airtight container make sure theyre 100% dried. I put mine in a lunch size paper bag for a month after I think theyre dry. That membrane comes off when the outside is dry,the inside prob needs another two weeks once the membrane comes off.
