once a pumpkin is done growing how long will it last with out rotting?

Varies a lot. Cool and dry help.If the fruit stopped growing already then its likely not to make it-but that's speculation.keep it on the plant and shade it for best chance.

I have kept AGs till Christmas too and smaller varieties until the next spring.

if already picked ---cool and dry as darth cojoe suggested. if all done growing but still hooked up to the plant? ---cut away all but one or two vines to support the pumpkins health, keep a sheet over her and then later on once picked? see above. pap

the pumpkin is 38 days old and is about 126 lbs plant is healthy and weather is mid 70s

That does sound a little small for an average AG seed. I'd be a bit concerned, but if it is continuing to grow, leave it on the plant as long as the plant is healthy and the stem is too.
