Subject: Help With Selfed Crosses to Get Specific Traits

I want to better understand the process of selfing pumpkins to obtain specific traits. I know this is a common practice in the agricultural world but want to better understand how you know when you've locked in a specific trait through generations of selfing a seed. For example, the 1725 was selfed. There was a clone of the plant that grew the 2009 that was then selfed. If that plant's pumpkin has the same traits for color, shape, and is a good grower and was selfed then does it mean those traits are getting "locked in" through the selfing process or when do you know you have developed a desirable trait genetics wise?
