About 30 plus days for fully viable seeds, but I just took a cull pumpkin that was 19 days old off of one of my plants and extracted some seeds that seem as though they will be able to germinate (with the right germination conditions)

Actually, you're looking at closer to 45 days minimum in my experience, and you'll probably want more like 55 depending on how long you are able to hold onto the fruit after removing it from the vine.

I've germinated seeds from a 25 day old pumpkin. The seedlings were weak, but grew out normal. I wouldn't recommend trying it unless you have to.

Andy: I agree with you, but 30 days would be enough to produce seeds that can be germinated. They wouldn't have as high a rate of germination as a 45 day old pumpkin, but they would work if you really want the cross. If you have the time, then let the pumpkin grow for longer, as this would be best.
